Mamon is an Authentic Filipino Sponge Cup Cake

Mamon is definitely a very popular Filipino-style light sponge cup cake. Indeed, they are soft and fluffy in texture and are popular to have for breakfast, dessert and/or snacks. Usually, they are baked in a special molder which gives the mamon its special distinctive shape. Truly, vending delicious pastries like the Mamon cup cakes are gonna be fantastic!
“True sponges contain no fat”, only eggs (which actually contain a bit of fat) and sugar whipped to an emulsion with some flour that is gently folded in so as not to disturb the bubble structure of the mixture. And for the record, all other types of cake contain added fats. Thus, the Mamon is a healthy snack.

Mamon Cup Cake Ingredients…as authentically baked!
- ⅔ cup plus ¼ cup cake flour
- 1½ tsp of baking powder
- ¼ tsp of salt
- 4 egg yolks
- ¼ cup water
- ⅓ cup granulated sugar
- ½ tsp vanilla extract
- 3 tbsp vegetable oil
And of course, for the meringue…
- 4 egg whites
- ¼ tsp cream of tartar
- ¼ cup granulated sugar
And, for the topping (which is optional)
- Unsalted butter, melted
- Granulated sugar
- Grated cheddar cheese
